Brunch has become hot hot hot! Seriously, I feel like it’s the prom queen these days. Everyone is all about brunch! One of the newest, hippest, hottest spots in town is in the new Bridge Park in Dublin, Ohio. Located on the rooftop of the AC Hotel, VASO not only delivers with spectacular food but the views, oh those views are to die for.
There is a free parking garage located behind the hotel so you have the option to either walk through the hotel (my preference because I love everything about this hotel and it always puts me in a good mood when I can take in the sights and smells of this gorgeous space ) or you can bypass the hotel and enter through the side door and take the elevator upstairs.
VASO opened a few months back and quickly became one of my new favorite spots. Their drinks are so hip – my all time favorite is the Calimocho which is carbonated tempranillo and house-made cola syrup. With such a high standard to live up to, I was thrilled to find I loved every brunch drink we experienced.
Mimosa: Served by the glass or by Porron which is a classic Spanish vessel used to pour directly into your mouth. And are you taking a peek at those views – swoon!!!
Tortilla Espanola: Spanish style potato omelet, manchego, garlic aioli
Ensalada De Brotes De Bruselas: Brussel sprout salad, in the style of caesar, marinated white anchovy
VASO Red Snapper: Watershed VASO custom gin, tomato juice, spanish hot peppers, ginger, lime
Bloody Mary Bar. VASO is also participating in the Celtic Cocktail Trail. The trail highlights the best of Dublin dining and craft cocktails with an Irish flair. Print off your guidebook (or snag one from the Dublin Visitors Center), completely 5 stops and redeem a commemorative koozie or complete all 11 stops and score an exclusive Celtic Cocktail t-shirt designed by TRU MAN Brand.
Chorizo Vino Tinto Hash: Pork sausage cooked with red wine, yukon potatoes, caramelized onion, fried egg
Benedictino Del Sur: English muffin, lechon asado, braised greens, poached eggs, pimenton hollandasie
Puesta De Catalonia: Wastershed VASO custom gin, sweet vermouth, cherry, orange, honey
Coca Con Gambas: Shrimp flatbread, white bean, manchego, tomato jam
Pan Con Aguacate Y Huevos: Avocado toast, poached eggs, crispy peas
Madrid Old Fashioned: Oloroso sherry, simple syrup, lemon bitters, dark rum
I cannot rave enough about this new spot. Besides the snow, cold and gray weather (yuck), I’m ready for spring so I can head over and enjoy the rooftop (expected to open in April dependent upon weather). If you’ve had the chance to check out VASO, leave your favorite dish or drink in the comments.
